Like most of my guests on the Grand Lake Cultural Cuisine food tour , I often leave with visions of chocolate almond croissants dancing in my head. So needless to say when it was time to make a dessert for a party I was invited to over the holidays, I immediately decided to try my hand at replicating the delicious taste that our final stop La Parisienne happily leaves in my mouth. I made a chocolate almond cake.
I must admit that I had never personally baked with almond paste before so this was a new culinary adventure for me. But with a little help from the recipe of almond cake I found inside the box of Odense almond paste I bought at Whole Foods, my dreams of recreating our tasting at La Parisienne was close to coming true.
For the base of the cake, I literally started with the Almond Pound Cake recipe I found on the inside of the box of almond paste. Here is the full list of ingredients:

The recipe leaves you there. But again, I wanted that chocolate almond combo that makes my tastebuds go wild. So, in some Sandra Lee -inspired “semi-homemade” genius, I spread some Nutella, a light layer of sliced almonds and a little dusting of confectioner’s sugar. That’s it!
Ok, this chocolate almond cake is not quite the same as the croissants that we enjoy on the Grand Lake Cultural Cuisine food tour. But to satisfy my sweet tooth and my craving, this was a easy cake to make (other than the almond paste, I already had all of the other ingredients) and a terrific party pleaser.
