I truly feel that the culinary stars aligned for me recently with this watermelon ceviche dish that I recently saw in the latest issue of Parents Magazine. The forecast was calling for a hundred degree weather, I needed to bring something to my friend’s BBQ and my neighbor was trying to unload half a ginormous watermelon before heading off for vacation. Cue the cooking gods!
This watermelon ceviche turned out to be the perfect pairing to a tasty grill-out on a hot summer evening. Cool and sweet with a bit of a bite thanks to the jalapeños and lime juice, this could easily be my go-to summer side dish. It was simple to make. Plus, I was able to also utilize the mint I’ve been growing in our new backyard garden (we’re hoping that by growing some herbs and veggies it also helps our toddler eat his herbs and veggies).
Like most summertime salads, this watermelon ceviche was even better the next day thanks to all of those juices combining together. Oh, and since I was feeling a little inventive, I added a bit of crumbled feta cheese that I recently purchased from Market Hall Foods that added a really great creamy texture among the crisp crunch of the watermelon, cucumber and onion. Yum!
