Slow Cooker Chicken Burrito Bowl [Recipe]

My neighbor Katie (and also amazing home baker – follow her on Instagram @homebakedbykate ) shared with me this recipe for Slow Cooker Chicken Burrito Bowl from mom blogger No. 2 Pencil. As a working mom who does food tours, I’m constantly juggling between going out and trying new restaurants, and having dinner at home with family. Since I like to maximize nap time for work, putting together an elaborate dinner most nights doesn’t really work. (Even Rachel Ray’s 30 minute meals is sometimes stretching it!) So the slow cooker truly has become my saving grace. Plus, my husband says that it’s also the source of some of our best meals. This is one of them.

What I love about this Slow Cooker Chicken Burrito Bowl recipe is that is truly follows that set-it-and-forget-it model. You literally throw everything into the slow cooker, set the timer and enjoy about five hours later. Plus, I love the fact that it uses spices that I can pick up at Oaktown Spice Shop , one of the stops on our Grand Lake Cultural Cuisine food tour , as well as olive oil that I get from Amphora Nueva , a stop on our Eat Stay Love Lafayette food tour.

(Honestly, using these ingredients really makes it taste a lot better – and I promise that they are not paying me to say that!)

This recipe is a really versatile meal. It’s a great source of protein with the black beans and chicken. (You can choose to make it vegetarian by leaving out the chicken). Plus, both my husband and son love to eat it with tortilla chips while I like to put some on a bed of mixed greens for more of a salad. We also like to top it with some salsa and black olives for some extra flavor … and, yes, those needed veggies for my kiddo.

This recipe will yield a lot so be prepared for leftovers. Make sure you have some large tortillas to make actual burritos and some extra chips for homemade nachos later in the week.

Slow Cooker Chicken Burrito Bowl from No. 2 Pencil

Here is the full list of ingredients:

  • 1 pound boneless skinless chicken breasts about 2 large breasts
  • 2 tablespoons of olive oil
  • 3 teaspoons of onion powder
  • 2 teaspoons of garlic powder
  • 3 teaspoons of chili powder
  • 2 teaspoons of cumin
  • 1 teaspoon of kosher salt and freshly ground pepper to taste
  • 3 cups of low-sodium chicken broth
  • 1 15 oz can of diced tomatoes drained
  • 1 14 oz can of black beans drained and rinsed
  • 2 3/4 cups of instant whole grain brown rice
  • 1 1/2 cups of shredded colby jack cheese

And by the way, if you’re really pressed for time in the morning, this recipe also gives you the freedom to do everything the night before. Just put the inner ceramic slow cooker bowl in the refrigerator. How could you not like that!
